Bread and Pastries Baked Fresh Daily
At Missy’s, our breads and pastries are baked fresh daily using time-honored, old-world techniques that prioritize deep flavor and true nourishment over speed and convenience. We keep our ingredients simple, just what is needed and nothing more, allowing time, craft, and quality to speak for themselves.
Slow down and savor the simple things in life. Food made by hand, shared at the table, and the quiet hum of conversation all around. A good loaf of bread has a way of bringing people together, creating space to connect, to linger a little longer, and to find joy in the everyday.
From Our Family to Yours
Our story begins with Missy, a pastry chef who spent over 20 years learning traditional, old-world baking. Along the way, she came to understand that bread does more than feed people. It nourishes the body, soul, and community.
When she stepped away from the kitchen to raise her five children, that belief took root at home. Baking became part of daily life, a way to gather around the table, share a meal, and slow down together.
Years later, Missy and her oldest daughter, Maddy, brought that same spirit to a farmers market in Kerrville, spending a year refining their craft one loaf at a time. That love for simple, honest bread is what we now bring to your table in San Antonio.
Our Bread Philosophy
Locally Sourced
& Organic
From our flour, including locally milled grains from Barton Mills, to our produce and meats, we source locally whenever possible, partnering with organic farmers who share our values of simplicity, honesty, and quality.
Long
Fermentation
Our doughs are slowly fermented to develop deep flavor, natural texture, and better digestibility, honoring traditional methods that rely on time instead of shortcuts.
Ancient
Grains
We work with ancient grains like einkorn, valued for their rich flavor and nutrition, connecting our bread to the earliest traditions of baking.
Simple
Ingredients
Our bread is made with just flour, water, salt, and levain. No additives, no preservatives, just honest ingredients handled with care.
Hand-Mixed and
Shaped
Each loaf is mixed, shaped, and scored by hand in small batches, preserving the character, care, and craftsmanship of true artisan bread.
Cultivating Community, One Loaf at a Time
In the old world, bread was never meant to be eaten alone. It was placed at the center of the table, meant to be broken, shared, and savored in good company.
We carry that tradition forward in everything we do. Our bakery is a place to gather, to linger, and to reconnect with others. A place where conversations stretch a little longer and simple moments feel meaningful.
Whether you’re stopping in for a quiet morning coffee, meeting a friend over lunch, or bringing home a loaf to your family, we hope our bread becomes part of your daily ritual. A reminder to slow down, to sit together, and to enjoy the simple joy of sharing good food made with care.
